Chef Yasuhiko Inoue
Chef Inoue embarked on his culinary journey at the age of twenty. While working as kitchen staff in a renowned eatery in Fukuoka, he explored various cooking styles from all over, learning through his own lens. His curiosity and conviction led him to Belgium, France, and Italy at the age of twenty-four. Upon returning to Japan, he opened Simples in downtown Shizuoka City, an unfamiliar land to him at the time. The philosophy? To “strip away the unnecessary, and highlight the robustness of each ingredient, simply." It was here he met Maeda-san of Sasue Maeda Fish Store, and became enamored with the depth of handling fresh fish, as well as Maeda's exceptional skills. This led to an exclusive partnership in sourcing ingredients direct from Suruga Bay. Even after relocating to Mariko, Simples continues to be renowned as a remarkable destination for seafood connoisseurs from far and wide.
The taste of home, Shizuoka Oden
This traditional dish features ingredients like beef tendon, daikon radish, eggs, a variety of fish paste delights and more, all skewered and simmered in a dark warm savory broth. It's a local cuisine beloved in Shizuoka for generations.
Mariko-shuku's famous Tororo-jiru
Hidden in the ground of the Mariko region, home to our inn, is a unique geological treasure: alkaline basalt. This distinctive soil, paired with the area's favorable climate, creates the perfect conditions for cultivating high-quality wild yams, a tradition here for centuries. Savor our renowned grated yam delicacy, otherwise known as tororo-jiru, a specialty that has been pleasing travelers since the Edo period.
