Simples

An omakase experience shaped by instinct and the purity of ingredients.

ディナー

Dinner

At this celebrated restaurant, each course is crafted by Chef Inoue using the finest seasonal ingredients sourced from Shizuoka. The seafood is hand-selected by Naoki Maeda of Sasue Maeda Fish Shop, a trusted name among Japan’s top restaurants. Suruga Bay’s rich waters, lovingly grown local vegetables, and wild game delivered directly by hunters set the stage for Simple’s menu.

Every dish captures the mood of the season and local land with care. Just as the name suggests, the ingredients speak for themselves, requiring little ornamentation.

Complementing the flavors are regionally inspired drink pairings, including a thoughtful selection of non-alcoholic options. You’ll dine on handcrafted tableware by artisans from Takumishuku and sit at a washi-covered counter made by local paper masters.

Let your senses guide you. Simples is a place to savor freedom, precision, and the power of great craft.
